Tony's Table: Dinosaur Kale Soup
NEW YORK (CBS 2) - There's nothing like a hot, hearty soup to warm up your family. CBS 2's Tony Tantillo has an easy recipe that you can make tonight!
The Dinosaur Kale Soup
Ingredients:
4oz. Diced Carrots, Onions & Celery
2 Yukon Gold Potatoes
2 Medium Zucchini
1/4 Cup Elbow Macaroni
1 Cup Dinosaur Kale Leaves
1 Quart Chicken Stock
1 15oz. Can Cannellini Beans, Drained
2 Bay Leaves
2 Twigs Rosemary
1/2 Cup Olive Oil
Toasted Baguette Slices
Extra Dash of Rosemary, Garlic Powder
*all ingredients may vary by amount and time
for soup:
-in soup pot, add olive oil, diced carrots, celery & onions
- cook until translucent, do not brown
-add low sodium chicken stock, bring to boil
-add zucchini & potatoes... cook for 10 minutes
-then add dinosaur kale, pasta, cannellini beans, bay leaves & rosemary
-cover, cook at medium heat for 30 minutes
-serve in bowl with garlic crostini
for crostini:
-toast baguette slices
- add dash of rosemary, garlic powder & drizzle with olive oil
