Tony’s Table: Sausage Mushroom Pasta

NEW YORK (CBS 2) — In this segment of Tony’s Table, CBS 2’s Tony Tantillo and Cindy Hsu cook a fresh dish of sausage mushroom pasta.


Cook pasta

Cook sausage (hot and mild)

Remove grease

Add tomato and tomato puree

Then add mushrooms

Cook for 20 minutes to get flavors all together

Add a little bit of grated parmesan cheese

Add a little salt and pepper

Add pasta to sauce after pasta is finished cooking

Cover it for about 5-10 minutes in low heat

Add more cheese and parsley

    Pasta With Sausage


    2 Mild Link Sausages
    1/4 lb. Fresh Pasta
    1/4 lb. Mushrooms
    1 c. Grape Tomatoes
    1/2 c. Diced Tomatoes
    4 Cloves Garlic
    1/4 c. Chicken Stock
    6 oz. Olive Oil
    Basil, Parsley, Parmesan Cheese

    Meal Preparation:

    In a pot, boil pasta for 3-4 minutes. Remove skin from sausage and cook in pan with hot oil and chopped garlic. Brown sausage and then remove the grease from pan. Add chicken stock, grape tomatoes cut in half and chopped tomatoes. Cook together for 10-15 minutes on low heat. Add mushrooms and some pasta water to pan and cook together 5 minutes. Add cheese and pasta to pan. Add parsley and basil. Simmer 5 minutes and serve

    (NOTE: Prep times can vary by equipment. Be sure to check that meat is fully cooked.)

      This is dish he did the next day that is very similar. The original used mild and hot sausage with tomato purée and fresh parsley. I used my judgement on the amounts and it came out great. Family loved it.

    What kind of fresh pasta? How much tomato and tomato puree. Tony also referenced including stock. How much. Can this receipe, with more specificity be posted here please.
