Tony's Table: Chicken With Broccolini
Ingredients:
1 Grilled Chicken Breast
1/4 c. Olive Oil
6 oz. Grape Tomatoes OR
12 oz. Can Chopped Tomatoes
1 Bunch Broccolini
1/2 lb. Rigatoni
3 Garlic Cloves
Meal Preparation:
Grill chicken with olive oil, salt and pepper and set aside.
Cook the rigatoni 7-8 minutes in a pot of boiling water.
In pan, add olive oil and garlic.
Cook until the garlic is slightly brown.
Blanch the broccolini and add to the pan along with tomatoes.
Add rigatoni and cook 3-4 minutes.
Salt and pepper to taste. If desired, top with cheese.
