Tony's Table: Corn Salsa
What You'll Need:
3 Ears of Corn
1 Medium Red Onion
3 oz. Scallions
1 Green Bell Pepper
1 Yellow or Orange Bell Pepper
4 oz. Cilantro
3oz. Jicama
1/2 Jalapeno Pepper
3 Cloves Garlic
1/4 c. Olive Oil
Salt & Pepper
*** recipe may vary by ingredients or cooking time
- Remove kernels from ears of corn
- Sautee in a pan 3-4 minutes with olive oil until kernels are bright yellow
- Remove corn from heat
- Chop remaining ingredients, mix in a bowl with cooked corn, drizzle with olive oil, add salt & pepper to taste
- Serve & Enjoy
** note: corn can also be grilled for this recipe
- if grilling, grill corn on the cob 3-4 minutes until kernels are bright yellow
- remove corn from grill
- remove kernels from cob, follow recipe as listed above
