NEW YORK (CBSNewYork) – It’s Groundhog Day!

Will we see six more weeks of winter? And what is the origin of the tradition of the groundhog/shadow tradition?

Jeremy Goodman, Director of the Turtle Back Zoo in New Jersey, stopped by the studio to discuss those things. He also introduced us to Groundhog Day Salad.

Ingredients:

• 1 bag arugula/spinach mix (8 0z)
• 1 Granny Smith apple, diced
• 2 stalks celery, diced
• 1/4 cup almonds, sliced
• 6 strawberries (about 1 cup), sliced

Preparation:

In a large bowl, combine arugula/spinach, diced apple and celery with sliced almonds and strawerries. Top with your favorite dressing. Serving size: 4 people (or 16 groundhogs).
