2 In The Kitchen: Peanut Butter Granola

NEW YORK (CBSNewYork) -- March is national peanut month. We celebrate with Lee Zalben, founder of Peanut Butter & Co. for a healthy dish for breakfast --- or dessert!

Ingredients:

3 Cups rolled oats (not instant)

1 cup roasted peanuts

¼ cup wheat germ

½ cup shredded coconut

½ teaspoon ground cinnamon

½ teaspoon salt

1 cup canola oil

1 cup honey

½ cup Smooth Operator peanut butter

1 teaspoon vanilla extract

½ cup raisins

Directions:

1. Preheat the oven to 300 degrees Fahrenheit. Grease a 13 x 9-inch baking dish with unsalted butter or light vegetable oil.

2. In a large bowl, combine the oats, peanuts, wheat germ, coconut, cinnamon, and salt

3. In a small saucepan over low heat, combine the canola oil, honey, peanut butter, and vanilla. Stir until the mixture is completely combined - do not allow to simmer. Pour the warm peanut butter mixture into the bowl with the dry ingredients and mix until well incorporated.

4. Spread the granola in the prepared pan and bake for 30 minutes, or until golden brown.

Allow the granola to cool, then break it into chunks. Transfer to an airtight container suitable for storage, add the raisins, and mix until well combined.
