2 In The Kitchen: Wing King's BBQ Buffalo Wings And Buffalo Chicken Dip

NEW YORK (CBSNewYork) - Just in time to kick-off tailgating season, Drew Cerza, aka The Wing King, and founder of the National Buffalo Wing festival, shows us how to make BBQ Buffalo wings and dip.

So whether you'll be tailgating onsite at the stadium or from the comfort of your couch, Cerza will showcase some ideas for creating quick and easy recipes for game day.

Wing King's BBQ Buffalo Wings

Chop up and sauté

2  T.  Butter

1  large shallot

2  garlic cloves

Add:

Dark Beer : 2 oz.

Chili Sauce:  1 cup

BBQ Sauce : 1 cup

(stir up for 1 minute)

Add:

Ancho Pepper: 1 ½ t.

Brown Sugar : 1/2 cup

Honey: 1/2 cup

Cayenne Pepper Sauce: 4 oz.

(Stir up for 2 minutes)

Chicken Wings:

As you create the sauce, drop 50 chicken wings (the amount you drop in at one time will depend on the size of your fryer) in your table top deep fryer.

Once wings are fully cooked, sauce the wings in a large mixing bowl. To plate the wings: garnish the plate with celery and carrots and serve with a side of blue cheese dressing.

Buffalo Chicken Dip:

Ingredients:

1 (8 oz.) package cream cheese, softened

½ cup  Blue cheese dressing

½ cup Cayenne pepper sauce

½ cup crumbled blue cheese

2 cans (12.5 oz. each) white chunk chicken breast in water, drained  or rotisserie chicken, shredded.

Directions:

Heat oven to 350ºF. Place cream cheese into deep baking dish. Stir until smooth.

Mix in salad dressing, cayenne pepper sauce and cheese. Stir in chicken.

Bake 20 minutes or until mixture is heated through; stir. Garnish as desired. Serve tortilla chips.

Makes 3 1/2 cups dip.
