If you’ve been to a holiday party this year, maybe you’ve noticed more vegetarian and vegan options than ever before.
But how about an all-vegan holiday party? R.J. Thompson, general manager of the Blossom du Jour restaurant in Manhattan, is making it easy.
He visited The Couch to show us some of his most popular holiday dishes, including “Grandma’s Vegan Pot Pie.” While the dish is usually associated with chicken, Thompson stirs it up with no butter, vegan marginire and “un-chicken stock,” which is soy wheat protein based.

Grandma’s Vegan Pot Pie
1/2 cup Organic Corn
1/2 cup Organic Green Peas
1 cup diced Organic Carrots
1 cup chopped Organic Onion
1/4 Bunch Parsley
1/2 cup chopped Un-Chicken
2 1/2 Vegetable Bullion Cubes
100 grams Vegan Margarine
3 cups Water
Salt & Pepper to Taste
