Pineapple Chicken


6 Pineapple Slices (divided)

2 Chicken Breasts

1 Bunch Cilantro

1 Pinch Chili Powder

1 Pinch Cumin

1/4 tsp. Sea Salt

1/2 Red Onion (diced)

1 Red Bell Pepper (chopped)

1 Lime (juiced)

1/2 tsp. Honey


Grill chicken until 70% cooked. Then add chicken to pan with pineapple, after a few minutes add cilantro, chili powder, cumin.  Separately, combine red onion, red pepper, lime juice, honey, and remaining pineapple. Put salsa mixture over chicken and serve.

(NOTE: Prep times can vary by equipment. Be sure to check that meat is fully cooked.)
