Tony's Table: Quinoa With A Kick

NEW YORK(CBS2) -- Tony and Stephanie Tantillo were back in the kitchen on Monday with a Quinoa recipe that will give your dinner a serious kick. You'll find the recipe below, or check out the latest from Tony's Table in the video clip above.

Kickin' Quinoa

1 c. Grilled Corn

15 oz. can Black Beans

1 Tomato (cubed)

1/2 c. Cilantro (chopped)

1 Orange Bell Pepper (chopped)

1 Lime (juiced)

1/2 White Onion

Preparation:

Cook quinoa according to directions on packet.  Sauté white onion with extra virgin olive oil on medium heat for 4 minutes, until soft.  In a large bowl, combine quinoa, black beans, orange bell peppers, tomatoes, cilantro, white onion and top with lime juice.
