Stephanie & Tony’s Table: Cajun Fish
1/2 lb. Flounder Filet
1 tbsp. Butter
1/4 c. Flat Leaf Parsley (chopped)
1 c. White Rice
12 oz. Black Beans (strained & rinsed)
1 tbsp. Creole Seasoning
1 tbsp. Cayenne Pepper
1 tsp. Black Pepper
3 tsp. Lemon Pepper
Pinch of Dried Oregano
Brush both sides of fish with lemon juice, and coat with seasoning. Drop fish in skillet of hot oil and melted butter. Fry on both sides until golden and white in the middle, remove from heat.
Meanwhile, bring 2 cups water to a boil and cook rice, reduce to a simmer and cover for about 20 minutes, or until all water is absorbed. When rice is 80% done, add in black beans and continue cooking. Mix in parsley, stir and serve with fish. (use any additional seasoning in rice if desired).
