Stephanie & Tony’s Table: Mint Swordfish

Mint Swordfish


1/2 lb swordfish steak
3 tbsp extra virgin olive oil
1 clove garlic
1 cucumber, peeled and diced
1 red bell pepper diced
sea salt and pepper to taste
5 leaves fresh mint.


In a medium pan, heat up 2 tbsp. oil and garlic and add swordfish when garlic has become translucent. Cook swordfish for a few minutes on each side for 2-3 minutes on each side (or until white in the middle).

Meanwhile, combine peppers and cucumber in a mixing bowl and stir in remaining olive oil, salt and pepper.

Coat fish with mint, and cucumber pepper mixture.
