Chicken Stuffed With Prosciutto, Spinach & Mozzarella

2 Chicken Breasts, flattened
2 Slices Prosciutto
2 Slices Mozzarella Cheese
6 Leaves Spinach
¼ Cup Olive Oil
½ Cup Marinara Sauce
3oz. Italian Parsley
Salt & Pepper to taste
3 oz. Italian Parsley, chopped

Heat olive oil in a pan, cook chicken until slightly browned (1 minute to 1 ½ minutes)
Remove chicken from pan.
Lay 1 slice prosciutto, 1 slice mozzarella & 3 spinach leaves on each chicken breast
Season chicken with salt & pepper
Roll up chicken, return to pan
Heat 4-5 minutes, until fully cooked
While chicken is cooking, warm marinara sauce
Remove cooked chicken from pan, serve with marinara sauce & parsley.
