Chicken with Spinach and Orzo

1 chicken breast, grilled

2 scallion stalks, sliced

3 Roma tomatoes, chopped

2 cups spinach

1 cup orzo

1/2 bunch parsley, leaves only

Pecorino cheese to taste.


Cook orzo according to directions on package. Grill chicken on both sides until white in the middle, remove from heat and chop.

In a saute pan, heat up oil with scallions and tomatoes. Once tomatoes are soft add in chicken, and spinach.

When spinach has wilted (about 1 minute) add in orzo, coat pasta with sauce and serve with parsley and cheese.
