Brussels Sprouts & Penne


2 c. Whole Wheat Penne

10 Brussels Sprouts

1 c. Grape Tomatoes

½ c. Chick Peas (rinsed and strained)

2 oz. Extra Virgin Olive Oil


Add oil to a pan, and then Brussels Sprouts cut in half with the side down.  Put the pan on medium-high heat for about 8-10 minutes and let the Brussels sprouts caramelize.  Add in water as needed for steam.

Cut tomatoes in half and to pan along with chick peas; and stir all together.

Add in penne and season with salt and pepper. 

(NOTE: Prep times can vary by equipment. Be sure to check that meat is fully cooked.)
