Eggplant Pasta With Basil


1/2 lb short grained pasta

2 oz extra virgin olive oil

4 garlic cloves, minced

1 eggplant, cubed

4 basil leaves, ripped


Cook pasta according to directions on package. In a medium pan, heat up oil with garlic until garlic begins to brown and add in eggplant. Cook eggplant for about 8 minutes or until crispy and add in pasta and coat pasta with eggplant mixture. Toss in basil and serve.
