Stephanie & Tony’s Table: Fingerling Potato Pasta
NEW YORK (CBSNewYork) – There’s nothing better than a hearty meal to help you thaw out from a chilly day. Stephanie and Tony Tantillo suggest you cook up this savory dish.
Fingerling Potato Pasta
6oz. Fingerling Potatoes, sliced
3 oz. Sweet Yellow Onions, finely chopped
4 oz. Olive Oil
3 oz. Chicken Stock
8 oz. Mezzi Rigatoni
2 sprigs Rosemary
2 oz. Chopped Italian Parsley
In a heated pan, add olive oil, onions & potatoes.
Sautee 2 minutes.
Add chicken stock, reduce 50%.
Cook pasta in salted, boiling water to instructions on box.
Add cooked pasta, rosemary & parsley to pan with potato mixture.
Cook 2 additional minutes, serve.
