Stephanie & Tony’s Table: Open Faced Quesadilla
Open Faced Quesadilla
1 Flour Tortilla
1 Haas Avocado
1/2 Tbsp Course Sea Salt
1/2 Red Onion, Minced
1/2 Jalapeno, Seeded And Chopped
1 Tbsp Cilantro Leaves, Chopped
1 Chicken Breast
1 Lime, Juiced
Zest Of 1 Lime
Queso Fresco As Desired.
Season chicken with salt and pepper on both sides.
Grilled chicken until 80% done (still pink in the middle) and remove from grill.
Slice and saute with lime juice and zest until thoroughly cooked.
Muddle red onion, cilantro, jalapeno, and sea salt. Once totally muddled, add in avocado and muddle again.
Spread avocado mixture on top of flour tortilla, top with chicken and cheese.
