L.I. Bakery Named One Of The Best Bread Makers In The Nation

NEW YORK (CBSNewYork) -- A Long Island bakery has been named one of the best bread makers in the nation by Dessert Professional magazine.

Nancy and Keith Kouris opened their first Blue Duck Bakery Café in Southampton in 1999. The husband-and-wife team now have four locations.

Dessert Professional magazine said they make some of the best breads in the country.

Nancy Kouris said they have 30 different types of breads, from all different countries.

"We have French bread, German bread, Finnish bread, Swedish bread, Italian bread, Russian bread, you name it," she told WCBS 880's Sophia Hall. "We do make European style artisan bread. The bread has a very long fermentation time, so it has time for the bread to develop this really great smell, sourdough taste, very crunchy, crusty crust."

Keith Kouris went to the French Culinary Institute in New York where he learned how to bake European-style artisan breads.

He said his favorite type of bread to make is rye.

"Working with rye flour is challenging. Incorporating different grains and using various hydrations keeps me on my game," he told the magazine.
