2 In The Kitchen: Game Day Food

NEW YORK (CBSNewYork) -- Looking for some ideas to spice up your game day menu, whether at home or while tailgating at the game?

Brandon Fay, managing director of Trattoria Dell'Arte, stopped by the CBS2 studios to cook up some meatball sliders and chicken and vegetable skewers.

Here is Fay's recipe for the skewers:

2 ½  LBS Boneless, Skinless Chicken Breasts
2 ea. Red & Yellow Bell Peppers
2 ea. Red Onion
Dozen 8" Bamboo Skewers
1 Cup Extra Virgin Olive Oil
2 Cloves Garlic, minced or pressed
To Marinate Ground Black Pepper
1 Lemon
Fresh Herbs Rosemary, Oregano, basil
To Taste Sea Salt

 

  1. Cut chicken into 1-inch cubes. Cut vegetables into 2-inch pieces.
  2. Place chicken breast cubes in a bowl.
  3. In a mixing bowl whisk together the extra virgin olive oil, lemon juice, garlic, ground black pepper and herbs. Add diced chicken breast and toss to coat evenly.  Let marinate for 1-2 hours.  TIP: Zest the lemon first; you really get a more distinct lemon flavor.  TIP: Never marinate with salt, draws moisture out and makes the meat less juicy. Should only add salt prior to cooking.
  4. Thread chicken and vegetables alternately onto the skewers.
  5. Preheat grill medium to high. TIP: Don't forget to soak wooden skewers in water. Prevents the skewers from burning.
  6. Lightly coat the grill grades with vegetable spray. Season to taste with salt.  Place the skewers on grill.
