If you're a fan of Mexican roasted corn ("Elote") then you must try the Mexican Corn "Elote" Bowl at Sweetgreen. This bowl is 560 calories and a bit on the spicy side thanks to the lime, cilantro, and jalapeno vinaigrette that it's served with. Besides roasted corn, this bowl will make any herbivore happy. It's filled with organic quinoa and faro, organic arugula, roasted peppers, purslane, goat cheese, spicy sunflower seeds, cilantro, tomatoes, and cabbage. Yum! Also, you might want to take advantage of another summer menu item – the Summer Snap Peas + Mozzarella Bowl. This 465 meal is made of organic arugula and musclun, balsamic-marinated mozzarella, snap peas, pea shoots, red cabbage, and spicy quinoa. It's all tossed in a flavorful pesto vinaigrette. Does it get any more summer than that?
