Acclaimed restaurateur and chef Tom Colicchio is opening the highly-anticipated Fowler & Wells in September. Located in the historical The Beekman hotel, the menu reflects American culinary sensibility, calling to mind classic New York dishes from the 19th and 20th centuries, prepared in modern iterations. Influenced by New York's original fine dining restaurants and the restaurant's location in the 19th century landmark building, Colicchio and Executive Chef Bryan Hunt will integrate flavors and cooking techniques from across the world, with a New York twist. The name of the restaurant pays homage to an original tenant of The Beekman site, circa 1840: Fowler & Wells Phrenological Cabinet.
