Apple brandy and chai tea-infused vermouth seem made for each other, while the apple cider foam, borrowing a technique from the kitchen, offers a tart garnish.

Two of beverage director Somer Perez’s favorite things combine to make the Bourbon ‘n Apples at Perilla (bourbon, apple cider and bitters, garnished with a dehydrated apple chip). Bold bourbon is tamed by the sweet cider, while smoky bitters add depth to this simple yet crowd-pleasing cocktail.
