Tony's Table: Spaghetti with Salmon & Cream Sauce
NEW YORK (CBS 2) - Sometimes you have to indulge yourself in a great creamy, cheesy, tasty dish. CBS 2's Tony Tantillo says if you love salmon...then this is the "indulgent" dish for you!
Spaghetti with Salmon & Cream Sauce
1/2 lb. Salmon
3 tbsp. Butter
1/2 c. Heavy Cream
6 oz. Frozen Peas
2 oz. Fresh Tarragon
1/2 lb. Spaghetti
1/4 c. Pecorino Romano Cheese
1/4 c. Parmesan Cheese
1/4 c. Olive Oil
Salt & Pepper to taste
Italian Parsley to taste
** recipe may vary by cooking time & ingredients
-On a lightly oiled baking sheet, broil salmon with skin still on for 5 - 8 minutes (cooking time depends on thickness of salmon)
-In a pot of boiling, salted water, add pasta
-Cook pasta 7 - 8 minutes until al dente
-In a sautee pan, melt butter, add cream, salt & pepper
-Simmer on a low flame
-Reduce mixture 30 to 40%
-Add tarragon, peas & cooked salmon
-Cook 3 - 5 minutes, add both Pecorino Romano & Parmesan cheese to taste
-Add spaghetti
-Cook for 2 minutes
-Serve garnished with Italian parsley
