Chicken with Nectarines


1 chicken breast, pounded thin

2 oz. extra virgin olive oil

½ cup sweet anise, chopped

¼ cup yellow sweet onions, diced

1 nectarine, sliced

3 cherry tomatoes, chopped

1 tbsp shallots, minced

1 oz. fresh basil

1 pinch oregano


Sauté chicken breast in ¼ cup extra virgin olive oil, garlic, and oregano

Cook on both sides for 2-3 minutes on medium high heat

Separately, mix sweet anise, basil, red onions, tomatoes, and nectarines

To prepare, degrease the chicken by gently patting a paper towel on both sides, and lay salad on top.
