NEW YORK (CBSNewYork) – How about cooking up a light, summery treat that’s sure to please?
Spanish style summer rice
5 shrimp, grilled
2 cups brown rice
1 corn husk
3 Roma tomatoes, diced
4 garlic cloves, finely crushed
2 poblano chilies
1/2 bunch cilantro
2 tbsp extra virgin olive oil
Grill shrimp for 3 minutes in each side until pink.
Cook rice according to directions on package.
When rice is 70% done, add in tomatoes, garlic, chilies and corn.
When rice is done, add in olive oil and cilantro, stir to coat everything.
Add shrimp on top.
