Pasta in Ricotta


1/2 cup pasta

1 cup tomato basil marinara sauce

1 large red tomato

1 cup whole milk ricotta

1 tablespoon parmesan cheese

Sea salt and pepper to taste.


Cook the pasta according to directions on package. Warm the tomato sauce in a pan, and add in tomato chunks.

In a large bowl mix 1/2 cup ricotta with a spoonful of pasta water.

Fold the pasta in the bowl and mix together. Add some salt, pepper and parmesan cheese if you desire.
