This drink utilizes the distinctive complexity of Blume Marillen Apricot eaux-de-vie then balances it out with the rich notes of their home-made clover honey syrup, freshly squeezed lemon juice, and then charged with brut champagne. At $26 a glass, it’s worth every sip!
Pegu Club is where it’s at when it comes to champagne cocktails. In fact, they have an entire section on the menu called Champagne Opportunities. Definitely try their Champagne Apricato – French 75 Gin, apricot, lemon, and champagne. It’s a strong choice but it’s too delicious not to taste (plus the purple orchid petal garnish will put a smile on your face). It’s definitely on the sweeter side but it makes for the perfect night cap. Cheers!

Sip on the Fleur de Paradis ($22), which includes Hendricks, St. Germain, fresh grapefruit juice, Orange Bitters, Simple Syrup, fresh lemon duice, and is topped with champagne. Or stick to something more fruit forward like the Passion Royale ($24), with passion fruit-infused vodka, fresh lime juice, topped with champagne, and served over crushed ice. Help celebrate The Carlyle’s anniversary with a Bubble Toast to the 85th. This fun concoction is made with Two Billecart Salmon 2006 Champagne cocktails with fresh pomegranate seeds. Grab a seat and start people watching at this upscale and iconic hotel.
Mixologist Johnny Swet has created quite a gem of a cocktail at Skylark. Make sure to try The Coco, a fun and fruity infusion of peach, violet, chartreuse, St. Germain, Nolet’s gin, sparkling Prosecco, and floating strawberry pearls. Watch the bubbles rise in your flute while noshing on Mac & Cheese Cupcakes ($13), Barbecued Short Rib Bites ($16), or Charred Edamame ($11). Take in views of the city from the 30th floor and cheers to another fabulous year ahead.
