Tony’s Table: Chicken Paillard
NEW YORK (CBS 2) – Thinking of trying a new dish for dinner? CBS 2′s Tony Tantillo suggests Chicken Paillard as an easy, yet tasty dish for the whole family.
2 chicken fillets
4 oz. spring mix
3 oz. grape tomatoes
1 Asian pear
1 cup olive oil
1 oz. tarragon
Juice and zest of 1 lemon
3 oz. Gorgonzola cheese
2 oz. Balsamic glaze
I. Prepare chicken:
Pound chicken fillets until thin.
Place in pan with salt and pepper and saute until golden brown on both sides.
Remove from pan and drain on plate lined with a paper towel.
II. Prepare greens:
In a bowl, combine spring mix, tomatoes (halved), and pears (sliced or cubed).
III. Prepare dressing:
In a cup, combine olive oil, tarragon, lemon juice, and lemon zest.
Place chicken on plate.
Cover first with greens, then add dressing.
Top with Gorgonzola cheese and Balsamic glaze.
