Tony's Table: Orzo with Beef
NEW YORK (CBS 2) - Low temperatures, cold winds and cold nights mean it's time for something warm and hearty for dinner!
CBS 2's Tony Tantillo with a great, easy to make recipe for orzo with beef.
Orzo with Beef
- 1 cup Orzo Pasta
- 1 cup Beef Stock
- 2 Jalapeno Peppers, finely chopped
- 6 oz. Grape Tomatoes, halved
- 3 oz. Italian Parsley, chopped
- 10 oz. Rib Eye Steak, sliced
- 1/2 Red Bell Pepper
- 1/2 cup Tomatoes, sliced
- 2 Garlic Cloves
- 1/2 cup Olive Oil
- Salt & Pepper to taste
- shredded Gouda Cheese to taste
** recipe may vary by ingredients & cooking time
- in a pot, add 1/4 cup olive oil and orzo
- stir 2 - 3 minutes
- add beef stock, 1/4 cup of water
- cover pot, let cook 10 - 15 minutes, until orzo is plump
- in a pan, add 1/4 cup of olive oil, meat - heavily seasoned with salt & pepper
- cook 2 - 3 minutes on each side, until browned
- add jalapeno pepper, garlic cloves & red pepper
- simmer 5 -7 minutes
- add tomatoes, cook 1 minute - until moisture cooks off
- add orzo, Italian parsley
- serve, garnish with Gouda cheese
