Tony's Table: Spaghettini With Sea Urchin
NEW YORK (CBS 2) - It's time to try an exotic dish! CBS 2's Tony Tantillo with a great dish to try when feeling a little adventurous in the kitchen.
Spaghettini with Sea Urchin
(1 serving)
2.5 oz spaghettini
1 tbsp minced shallot
1 tbsp minced fennel
5 roasted cherry tomatoes
1/2 cup white wine
1 tbsp butter
5 picked basil leaves
7 pieces fresh uni
Pinch chili flake
Salt & pepper
While pasta is cooking, melt butter in saute pan. Add shallots, fennel, and cherry tomatoes and allow to swet for about 2 minutes. Add chili flake and white wine and allow to reduce by half. When wine is reduced add 5 pieces fresh uni and with a fork mash into the sauce. Take the pasta from the water and put into the pan. Check seasoning and add basil. Toss lightly and plate. Garnish with additional uni.
