Tony's Table: Shrimp & Avocado Salad
Ingredients:
2 medium Hass avocados, sliced and cubed (save the avocado shells)
1/2 tomato, chopped and cubed
2 oz. fresh jalapeno, chopped fine
2 oz. mint, chopped
2 cloves garlic, chopped
Juice of 2 Key limes
1/4 cup olive oil
Juice of 1 lemon
8 oz. shrimp, cooked, peeled, de-veined, and cubed
Prepare avocado mix:
- In a mixing bowl, combine shrimp, avocado, tomato, jalapeno, mint, garlic, and lime juice
- Add salt and pepper to taste, and stir to combine
Prepare dressing:
- In a small bowl, mix olive oil, lemon juice, salt and pepper
Combine:
- Pour dressing over avocado mix, then chill in refrigerator for 10 to 15 minutes
Serve:
- Spoon into avocado half-shells or into small bowls and enjoy
