Tony's Table: Vegetable Farro

Vegetable Farro

1/4 c. Farro
3 oz. Chopped Red Peppers
3 oz. Chopped Yellow Peppers
3 oz. Chopped Green Peppers
3 oz. Chopped Orange Peppers
3 oz. Cooked Edamame
2 1/2 oz. Olive Oil
1 1/4 c. Water
2 cloves Crushed Garlic
2 oz. Asiago Cheese
Salt to Taste
Fresh Chopped Tomato, Parsley To Taste

*** recipe may vary by ingredients or cooking time

-In a deep pot or sautee pan with boiling salted water add farro.
-Boil 20-30 minutes until slightly softened, remove from pan and set aside
-In the same pan, add garlic & olive oil
-Cook garlic until slightly browned
-Add peppers & edamame, cook until softened 2-3 minutes
-Mix in farro & asiago cheese (optional garnish: chopped tomato & parsley)
