Stephanie & Tony’s Table: Gnocchi with Sauteed Asparagus
Gnocchi with Sautéed Asparagus
1 c. Fresh Gnocchi
2-3 Thyme Stalks
4 Asparagus Stalks (chopped)
2 tbsp. Butter
1 Garlic Clove
1/2 tbsp. Extra Virgin Olive Oil
Salt and Pepper to taste
Cook the gnocchi according to directions on package. In a medium sauce pan, heat butter, thyme. Cook together for 5 minutes, until thyme is crispy and remove from pan, and set sauce aside.
In a separate pan, combine extra virgin olive oil and garlic, cook for one minute until garlic is golden and add asparagus. Cook for another few minutes all together, and then add asparagus mixture to butter sauce with gnocchi and toss together until well coated.
Season with salt and pepper and serve with the parmesan cheese.
