Tomatillo Salsa with Salmon

1/2 lb. Fresh Tomatillos

1 Jalapeno

1/2 Red Onion (chopped)

1 Garlic Clove (minced)

1/2 Bunch Cilantro

2 oz. Extra Virgin Olive Oil

2 oz. Seafood Stock

2 Salmon Fillets

Preparation:

Bring a saucepan of water to a boil, drop in tomatillos (enough that the water covers all of them).  Cover and let simmer for 10 minutes.  Blend cooked tomatillos with jalapenos, onion, garlic, and 1/4 cilantro bunch. Blend until smooth, add salt to taste.

Heat 1 oz. olive oil in a sauce pan. Once oil and pan are hot, stir in salsa. After 5 minutes of simmering stir in seafood stock. Continue to stir and reduce for 10 minutes. Remove from heat while salmon cooks.

Separately, add remaining oil to a pan, and cook salmon in hot oil for 1-2 minutes on each side. (If salmon is too rare to your liking, continue to bake it in the oven on 300 degrees until desired)

Coat salmon with salsa, and garnish with cilantro. 

(NOTE: Prep times can vary by equipment. Be sure to check that meat is fully cooked.)
