Mediterranean Tuna Salad

Ingredients: 

1 tuna steak, seared

½ fennel bulb

1 tbsp. fennel leaves

2 celery stalks, finely chopped

1 yellow bell pepper, finely chopped

5 grape tomatoes, halved

½ cup kalamata olives, pitted

Dressing:

2 tsp tahini

1 tbsp extra virgin olive oil

1 whole lemon, juiced and zested

1 pinch salt

1 pinch cumin

1 garlic clove, minced

Directions:

Sear tuna to desired doneness

In a large bowl, combine fennel, fennel leaves, celery, bell pepper, olives and tomato

In a smaller bowl, whisk together components of dressing and stir into salad

Place tuna, sliced, on top of salad.
