Local Veggies with Ground Turkey
2 oz. Extra Virgin Olive Oil
1 tbsp. Unsalted Butter
3 Garlic Cloves
1/2 lb. Ground Turkey
1 Green Bell Pepper (chopped)
1 Summer Squash (sliced)
1 Zucchini (sliced)
1 c. Wild Rice (optional)
Heat a large saute pan with 1 oz. olive oil, add in garlic and onions. Once garlic becomes slightly translucent, add in squash and zucchini and lower heat. Let cook for 5 minutes, stirring occasionally, then add bell peppers.
Separately, using remaining oil and butter, cook ground turkey until brown all the way through,
Mix turkey with vegetables, and serve hot.
If using rice, cook according to directions on package and toss with some herbs. Mix everything all together in a large bowl before serving.
(NOTE: Prep times can vary by equipment. Be sure to check that meat is fully cooked.)
