Mushroom basil bruschetta (Stephanie Tantillo)

Mushroom Basil Bruschetta

Ingredients

1 lb white mushrooms, chopped

2 oz extra Virgin olive oil

Salt and pepper to taste

Roasted red pepper flakes

1 pinch oregano

3 cloves roasted garlic, sliced

1 loaf Italian or French bread, sliced

1 cup packed basil leaves

Shaved parmesan cheese

Preparation:

Heat up olive oil in a skillet over medium heat, add in mushrooms and stir to coat them all with oil and seasoning, cook for about 5-8 minutes, and mix in ripped basil and roasted garlic.

Scoop mushroom mixture over sliced bread, and top with cheese.
