4 oz prosciutto 

3 cloves garlic, crushed

2 scallion stalks, sliced

1 can San Marzano tomatoes

1 tsp tomato paste

Salt and pepper

½ cup vodka

1 lb penne pasta

½ cup heavy cream

3 tbsp parmesan cheese.


Cook pasta according to directions on package.

In a skillet, cook up prosciutto until it begins to crisp. Discard excess oil in the pan, drop in tomatoes and tomato paste with salt and pepper. Cook together for about ten minutes, and pour vodka in.

Continue to simmer and allow alcohol to cook off for about 15 more minutes. Stir in cream and toss together, stirring occasionally for 5 minutes. Add penne, a spoon full of pasta water, and cheese. Stir again until pasta is well coated and serve.
