Stephanie & Tony’s Table: Kale Pasta
1/2 lb linguine
2 tbsp extra virgin olive oil
3 links Italian sausage
1/2 vidalia onion, chopped
2 bunches kale
Splash heavy cream
Red pepper flakes, to taste
Cook pasta according to directions on package, set aside and reserve some pasta water.
Remove sausage from casing.
In a heavy skillet, combine oil with garlic and onions. Once the garlic begins to soften, add the sausage and red pepper flakes. Cook together with a spoonful of pasta water and add kale.
Cook all together for about 8 minutes, adding pasta water if mixture becomes dry. Stir in heavy cream, scraping up sides to get all the meat mixed in. Simmer mixture and stir in pasta.
