Nutritionist Offers Ideas For Healthy, Delicious Summer Dishes
NEW YORK (CBSNewYork) -- It's summertime, and with the nice weather we've been having, who wants to stand over a hot stove to cook?
Nutritionist Maria Della stopped by the CBS2 studios to show off some easy yet healthy and delicious dishes for the season.
"This is a great way to eat light and worry about the waistline, and it's very refreshing," Dello said.
One suggestion Dello offered was to layer a Mason jar with refreshing organic veggies such as cut cucumbers, snap peas, peppers, quinoa and mixed lettuce. Add dressing when ready to eat -- apple cider vinegar or balsamic with olive oil. The salads are healthy, great to bring to the beach and environmentally safe, Dello said.
She also suggested making a summer salad wrapped in bib lettuce. It's a protein-packed and low in carbs. Add tuna salad, chicken salad or avocado and tomato salad.
Dello also recommended a summer's kids deserts -- fruit popsicles. Simply blend your favorite fruit in a blender with your choice of juice such as apple juice, coconut water or almond milk. Pour it into a simple pop mold and freeze overnight.
