'Vegan Divas' Bakery Bringing Vegan Sweets To Upper East Side
NEW YORK (CBSNewYork) -- If you think vegan food is all about bland, uber-healthy bites - prepare to have your mind and taste buds blown.
Vegan Divas is a new bakery on the Upper East Side which specializes in vegan treats.

The woman behind the bakery, Fernanda Capobianco, joined The Couch on Monday to show off some of her sweets. Below, also find her recipe for the Vegan Divas Chocolate Cake!
Vegan Divas Chocolate Cake:
Each slice has 207 calories and the cake is sliced in 10 slices.

Ingredients:
2 cups unbleached flour
1 1/2 cup cocoa powder
2 1/4 table spoons baking powder
2 1/4 table spoons baking soda
3/4 table spoons sea salt
1 package + 1 1/2 cup water
1/2 cup + 2 table spoons canola oil
1 cup soy milk
1 cup maple syrup
1 1/2 table spoons vanilla extract
1 1/2 table spoons apple cider vinegar
Instructions:
1- Pre heat the oven 325 degrees.
2- Spray two nine inch cake pans with oil and set aside.
3- In a large mixing bowl add: unbleached flour, cocoa powder, baking powder, baking soda and sea salt.
4- Blend silken tofu and water in food processor. Measure out 3/4 of this mixture and place in a separate bowl. Save the rest to use in another time.
5- Into the same bowl add the following ingredients: tofu water, canola oil, soy milk, maple syrup, vanila extract and apple cider vinegar. Whisk together until a thick cake batter forms.
6- Portion the bater evenly into the two pans.
7-Bake for 15-20 minutes or until a knife comes out clean.
8- Allow to cool for several hours and ice with Vegan Divas chocolate icing or your favorite icing.
