Cooking On The Couch: Stovetop Shawarma

Stovetop Shawarma & Tahina Sauce with Mediterranean Salad

Stovetop Shawarma
Ingredients:
½ cup paprika
¼ cup cumin
2 Tbs. turmeric
2 Tbs. allspice
salt and black pepper (a few pinches each)
1 boneless skinless chicken breast, sliced olive oil (for cooking)

Procedure:
Mix paprika, cumin, turmeric, allspice, salt and pepper in a mixing bowl and stir to combine Place chicken in spice mixture and mix thoroughly to ensure that chicken is completely covered in spices Cover and refrigerate overnight When ready to cook, place a heavy bottomed pan over medium-high heat and add 1-2 tablespoons of olive oil Remove sliced chicken from spice mixture, shake to discard loose spices, and add to pan, allowing to cook on one side for 2-3 minutes before turning Once chicken is completely cooked through (2-3 minutes per side), remove from pan and place on plate

Tahina Sauce
Ingredients:
1 cup raw tahini
½ cup water
½ cup lemon juice (freshly squeezed)
2 cloves garlic, minced finely
salt and black pepper (to taste)

Procedure:
In a medium bowl, combine all ingredients until tahina has a smooth consistency This sauce can be altered depending on personal preferences- for a thinner sauce, increase the liquid a tablespoon at a time until desired consistency is achieved; for a thicker sauce, increase tahini a tablespoon at a time

Mediterranean Salad
Ingredients:
¾ cup chopped fresh tomato
1 cup chopped cucumber
¼ chopped parsley
olive oil to taste
white vinegar to taste
fresh lemon juice to taste
salt and black pepper

Procedure:
Combine tomato, cucumber and parsley in mixing bowl Drizzle with olive oil to lightly coat and add equal amounts white vinegar and fresh lemon juice to taste Season with salt and black pepper, toss to combine
