Tortellini With Sausage:


8 oz. Cheese Tortellini

2 Mild Sausage Links

6 oz. Extra Virgin Olive Oil

4 Baby Yukon Gold Potatoes (thinly sliced)

3 Sage Leaves

3 oz. White Onions (chopped)

6 oz. Chicken Stock.


Bring a pot of salted water to a boil, and drop in tortellini for a few minutes.  In a pan, brown the sausage in 2 ounces of olive oil for 3 minutes and remove sausage from pan.  Pour out excess oil.

Add remaining oil, potatoes, sage, and white onions. Saute together for 3-5 minutes, then add chicken stock. Lower heat to a simmer and let reduce.  Add in tortellini and sausage with a small scoop of pasta water.

Stir together and serve. 

(NOTE: Prep times can vary by equipment. Be sure to check that meat is fully cooked.)
