Caroline Byron, a gluten-free pastry chef and baker, offers her Pumpkin Spice Ice Cream recipe that can easily be made at home. Whether preparing for a Thanksgiving feast or a fall festival, this ice cream is guarantee to become a favorite among anyone.

Ingredients:

1 1⁄2 cups raw cashews soaked (1­2 hours in boiling water, or in cold water overnight)

1 cup coconut milk or almond milk

3 Tablespoon coconut oil

3⁄4 cup pumpkin puree

1⁄4 cup maple syrup

1/3 cup brown sugar

2 teaspoons vanilla

1 1⁄2 teaspoons pumpkin pie spice

1⁄2 teaspoon cinnamon

1⁄4 teaspoon salt

Directions:

At least 24 hours before you plan to churn the ice cream, put the ice cream machine's bowl in the freezer to freeze. It should be frozen solid before using.

  1. Drain cashews and puree in a blender with coconut milk and pumpkin puree and spices and vanilla. Mix on highest setting to get as smooth as possible for 2­3 minutes.
  2. Melt brown sugar and maple syrup in a sauce pan over low heat with 3 tablespoons water until sugar has melted. Stir in coconut oil to melt. Stir in salt to dissolve.
  3. Gently pour sugar mixture into blender while running. Once fully added, blend on high until emulsified.
  4. Chill pumpkin mixture for an hour in the refrigerator before pouring into chilled ice cream maker.
  5. Freeze in ice cream maker according to manufacturer's instructions
  6. Transfer to a freezer safe container and freeze until hard, minimum 4 hours, preferably overnight
